Are you an 80 year old woman?

Salt, chili powder, garlic powder and lime juice.

I used apple juice, soy sauce, ginger and a little garlic. It was really good.
Maybe I should try it with orange juice, too.

No marinade - brine it for a couple hours. Turns out juicier, more tender, and tastier.

orange juice or lemon juice are really good. If you want to do a dry rub you can use OJ powder (Tang) or lemonade powder

mojo criollo

marinade whole thighs plus quartered onions in garlic, soy sauce, gochujang, gochugaru, ginger, sugar, a little honey, a little sesame oil for an hour. cook in a dutch oven with a little water (or, better, korean-style stock, although you'd have to make it yourself) for half an hour, add halved potatoes and cook for another half hour. garnish with green onion and sesame seeds.

ive got some stubbs chicken marinade I think it's Jamaican citrus or some shit someone gave it to me....haven't been brave enough to try it yet I may try it on some leg quarters and them smoke them

Dry brining works best. this just means salting the entire surface at least 6 hours beforehand and no more than 24 hours
