I tend to just eat lunch and dinner, though sometimes I'll have breakfast instead of lunch

The 'eat more smaller meals' is based on a fallacy, that the amount of energy used to digest is constant. It's not, it's proportional to the meal size. Meanwhile frequent meals keep a high level of insulin level throughout the day, which is actually quite bad for you.

If you ask your boss to give you 5 minutes to eat when you need to and deduct it from your break, most of the time people are ok with it. Sometimes you don't even need to stop working to snack on something. I guess it depends what you do for work.
