I've made okonomiyaki, nikujaga, katsu curry, karaage, zaru soba, tuna chirashi, udon, koroke, omurice, and onigiri. I'm addicted to umeboshi now too.

i never really cared for the strawberry frosted kind. the thicker pretzel with jelly in it was good. i liked the lotte kind with almonds. the snack aisles at the asian markets are full of good shit like that.

Is mochi a dish? If yes I choose that.

japanese people obsess over food. many restaurants specialise in only one thing.

Honestly, a big old Chirashi bowl from a good quality place that gives you the best stuff they have that day is probably my favorite meal in the entire world.

I've always wanted to try Oden because it looks kinda neat but processed fish and mountain yam jelly in fish broth probably sucks

gdi. I've actually yet to go because it's just so out of my way. Might stop tonight and get it as I'll be in the area...Fucking mochiko is prohibitively expensive anywhere else.

I hate that the regular grocery marks up ethnic/japanese ingredients like 5x what the damn asian grocer on the other side of town sells it for. "White privilege" is paying 5x prices apparently.

Gonna pick up mochiko, umeboshi, wakame, dry shiitake, random instant ramens, panko, tea, and some rice noodles.

My favourite is probably takoyaki. Really good snack food for fairs and stuff. The Japanese student exchange club would always sell them at events at my university. Oyakodon, katsudon and zaruudon are pretty tasty. Omurice is good lazy food. Mochi is a good dessert but it looks like a pain to make myself so I buy the Taiwanese ones at the store instead.

You can't make authentic Japanese food in the West so don't even bother. The core ingredients are lower quality, and how can you make a magnificent building on poor foundations?

Instead find out what the closest haute cuisine is for your climate and start there.

CORA AND CHIPPU

I made a pretty decent okonomiyaki with shit from H-mart (local korean/jap place). They had the sauce and flour and everything. Not particularly hard and it tasted roughly equivalent to what I had in Japan.

can you tell me how not to royally fuck up my own okonomiyaki? do you need to process the cabbage super fine? do you need to pour the batter kinda thin? cause I feel like mine are so thick and coarse they are impossible to cook correctly. that was my first time of course.

You actually can even in the UK which has a relatively small Japanese population there are some great import places and very authentic tasting restaurants.

My top 5 dishes not on there and not including stuff like Karaage. Funny enough there are no fish dishes, even though Japanese food is supposedly fish based there are probably more options for eating meat. The main difference is that elements of fish from seaweed/bonito make the way into meat dishes.
