I work at a japanese restaurant that serves curry and ketchup is an ingredient in it. Seen it as an ingredient in a lot of sauces for things like ribs and burgers as well.

I believe Filipino and Japanese spaghetti also uses ketchup as the sauce.

Isn't ketchup an ingredient in making char siu?

AllI can think of would be something evocative of Shanghai cuisine.

Why do you eat shit like that?

Not EVER

>Marinara sauce

I eat white rice with sugar, lots and lots of sugar. Never met anyone else that ever does this, but it's great for getting lots of cavities in a pinch.

Mac n cheese. It's fucking required.

I usually add sugar to my white rice too if I'm really poor and it's my only option. Sugar and vinegar. then I don't feel so empty inside

>in which unique circumstances is a chef allowed to use ketchup?

this is a surprisingly simple answer that most people try to over complicate.

You use it when you want to completely destroy and ruin a dish.

Yes in fact, Chef Joe DID shit that out.

>What is Marie Rose sauce?

Superior Ketchup.
It's got a slight spicy flavour.

as a chef, I make my own from scratch..

ketchup is permissible as a condiment, as an ingredient in various diner sauces, and perhaps in marinades. it's basically tomato puree with sugar, salt, vinegar.

tomato paste is permissible across many savory cuisines.
