It all depends on his feeling at the time. Clearly whether his nose grew or not was a symptom of his inner psyche, because lying is a human construct.
If he feels like he's telling the truth, it would not grow, so he would be 'lying'.
If he feels like he's telling a lie, it would grow, and he would be telling the 'truth'.
So what happens is always in direct contrast to what he feels would happen.
