Morels. Closely followed by porcini.

Pine/matsutake, hedgehog mushrooms, and black trumpets are all pretty close for me. Also morels.

Here in the states they come up mid may, and you'll find them around dead elm trees and a plant called a ''May apple'; can't say whether or not they're in your neck of the woods in Europe, or if the same conditions apply
We soak them in salted water to flush out the bugs, pat them dry and dredge them in flour and fry them in butter and go straight up bacchanal gorging, any that aren't consumed get dried and I reconstitute them and use them in things like risotto, pan sauce, etc.

Blushers taste amazing and they look virtually identical to Panther caps apart from the faint blush which are poisonous as fuck so they don't get picked up by crazy 4am foraging farmers.

Why not cut off the dirt already in the forest? No point bringing it home. Also easier to clean as they don't sprinkle that dirt on eachothers.

Definitely false morel. It's seriously poisonous without correct preparation and can be lethal without barboiling it two times.

It has a long tradition of use especially in Scandinavia and I have eaten them since childhood. I pick quite a lot of different kinds of mushrooms, but nothing can beat the false morel.

Picked a bunch of these bad boys the other day and made a nice pasta sauce with them.
My favorite is without a doubt porcini but didn't find any this time. It has been a bit dry for them I guess. Yellowfoot is also great.

They make an excellent sauce and are also good for pickling.

They're pretty plentiful here as well, I've eaten them, they're flavorless and have the texture of marshmallow, however, they absorb anything you put on them really well and grill and fry well. Slice them up like bread slices, marinade them and throw them on the grill and you'll have a really interesting dish. E.g, lemon juice and soy sauce will give you something akin to a cheese. They're pretty much a blank slate.
