I can't say anything to bison comparsion since I have never had bison but I would rate it like this:
Reindeer > moose > (red) deer
In price there is not much difference in Finland but moose is not easily available commercially.

we are trying to get better.
we have some good stews and reindeer dishes, and karjalanpiirakka + munavoi is a huge favorite of mine.
the shame is we year after year refuse to use the best of our own ingredients to just make simple, country-style rustic fare...
we got mushrooms, root vegetables, lots of game, excellent dairy, berries and what little fish there is left.
