Cold smoking

If you have a proper wok with a rack and lid, this is easy. Soak a handful of chips in water. Heat wok on high heat. Put chips in wok, insert rack, add food to be smoked, and put the lid on. Place a wet towel around the edge of the lid, and allow to smoke until food is properly cooked.

Make sure the cig is dead before you drop it between the couch cushions. I learnt that from experience, the best and most heartless teacher of life lessons!

It's a smoking thing, you add wood pellets and it smolders for a long ass time so you don't have to keep checking it or adding more wood.

It takes 3 days to properly cold smoke salmon (squaw candy) over alder.

If you have access to a well ventilated shack, balcony, flat enough roof, etc, an electric hot plate in a cardboard box (don't create a situation where the box can be exposed to flame/heat) with refrigerator racks poked into the inside walls to hold your fish/whatever above a frying pan of wet alder chips will work.

Experiment, but practice sound safety, and you will find a method that suits.
