I can store this in a cool dry cabinet for over a year.

It is used in almost all Hindu celebrations and offerings, and holds importance in sacred texts like the Ramayana and the Mahabharata.

You can use it to make panchamrutham, a mixture of 5 holy substances: milk, honey, ghee, curds, and sugar. In South India we like to use bananas instead of sugar.

One more: I'm using this to make rava kesari, a desert. You'll need semolina, ghee, sugar, cashews (optional), raisins (optional), cardamom pods, and water. You can skip the food coloring if you don't have any, it's not too important, but the color does look nice (if you have saffron handy, use that).

Ghee is awesome for pouring over popcorn. Because the liquid content has been removed and it's basically all fat, it runs off the pieces to coat them and doesn't make them soggy.

I ended up making the kesari today. Tastes great and it was pretty easy.

It's not very good for you but it's good for special occasions (I made it for a date!).
