I agree with the cream cheese, butter (lots), and milk to thin out. Boring potatoes are boring.

Yes indeed, potatoes are delicious, and a little salt is all a baked potato needs to be wonderful.
But mashed potatoes is another dish. Add heaps of butter and whip them with cream and potatoes reach another level of wonderful.

Putting butter on them makes them a little rich for my tastes. I can only imagine how fucking fat you would have to be to put cream in with mashed potatoes.

If you're just using dehydrated cubes/powder you're just adding salt, which is fine in many situations but that doesn't constitute stock, dip shit.

Pretty much what I did just without the herbs. Head of roasted garlic, butter, salt/pepper, milk, and grated Parmesan. Damn good stuff.

Boil potatoes, mash with butter.

Roast a bulb of garlic in the oven, squeeze into what's left in the pan, add some thyme sprigs. Use a nice, flavoursome stout to deglaze your pan, and then add 200ml~ or so more. Add 100ml cream to that and stir together. The leftover starch from the potatoes will help act as a thickening agent.

Pour stout cream sauce over potatoes, serve with some steaks or somethin'.

You don't need to do an entire pot of it, but a cup or so of chicken stock/broth will greatly improve the potatoes.
