I just have a vague idea that there are apt to be intrinsic differences between male and female hair appearance, growth pattern, and behavior, regardless of hormonal factors and any hair product use. And that these differences are visible if you know to look.

Scientifically speaking, it depends on how they behave and identify.

Gender identity refers specifically to ones social "role" in society. It is easy to confuse with sex and sexual orientation.

Consider gaydar. It's something lots of people in society talk about and even though it doesn't really exist it does exist as a social construct. The way it works though is that often homosexual males don't have the same mannerisms as straight males. This is because those mannerisms are actually part of a different social identity, that is to say they have a different gender. At the same time not all homosexual males have these mannerisms or subscribe to the "gay lifestyle" that others do. These individuals are homosexual males who are not gay.

In the same way, a trap might just be a straight pervert who doesn't identify as a woman in society and just wanted to have boobs to go along with their penis. Such an individual might have an entirely different gender identity from the others we've seen.

I call trannies by their preferred gender only out of politeness and to avoid a shit scene.
