What are you guys cooking for Christmas dinner? This is my first time cooking and eating Christmas dinner. Any suggestions? Roast beef? Turkey? Ham? What about the sides and desserts?

Currently on deck: Cornish hens. Sides have yet to be finalized: either wild rice and mushroom soup as a course, or wild rice & shrooms as a side; either Gruyere potato gratin, or soufflé; green beans & spätzle or creamed spinach; lemon chiffon pie or Apple cake dessert. Ideas welcome.

Ribs, brisket, shrimp, baked potatoes with all the fixings, Mac and cheese, appetizers, other goodies and lots of alcohol. I don't know what sweets we will have yet. I have the other people bring that. Will have 20. We don't do "traditional" Christmas meals.

I'm Pagan and most of my friends are Jews. We don't have Xmas dinner. Why couldn't you say, "...cooking for the Holidays?" This is quite ostracizing for those of different religions. Have a little more consideration the next time you post.

Baby back Ribs get a spiced seasoning rub, let sit 6 hours or so, bake wrapped in foil low and slow in oven for bout 2 1/2 hrs I guess --then finish out on grill with occasional basting. I use a Julia Child recipe. It's amazing, and the soy and honey sauce is out of this world. People have said they are the best ribs they have ever had. All thanks and respect to Julia Child. Been making em for years.
Yes, brisket will smoke for close to 12 hours or so give or take.

We always have fun, eat good food, shoot skeet, drink beers and stuff.

because Christmas is a secular holiday. religious people celebrate the christian aspect as well, but it isn't required. if you don't participate its your own damn fault so don't complain about missing out on something you choose not to be a part of.
