Fresh mozz is soft, creamy and mild, plus has nutrition. If there is flavorful basil, ripe tomato and some luscious fresh herb or garlic aioli, or sweet balsamic vinaigrette, sure it does! If we're talking eggplant parm sub, then use smoked provolone instead.
