Stoves like pic related are shit, yeah, but the induction cooktop I've got is great. Boiling water for pasta etc. takes like two minutes and it has 10 different settings.

I actually find this to be the case using a propane gas range, never had a problem with my electric stove being too cold.

Gas is much more expensive in Europe so they use electric.
Especially in professional kitchens the cost savings is enough they use inferior cooking tech.

Any cook worthy of the name and not a raging alcoholic or drug addled addict will be able to produce equal quality dishes using any fuel source except perhaps, wood fire.

This. Though electric is nice. No sauna kitchen. No hot handles/ladles/burning at the edges or the sauteuse. And nice, smooth surface to one-wipe clean rather than the hell that is gas burners and their foil covered accoutrements.

This. The slightest simmer is the only thing I'd ever found electric ranges to be good at. You must be doing something wrong, opie.

I have had both and I prefer gas because I can still cook when the power goes out. I also feel like I have better control with the gas range.
