I'm going to attempt to make the world's best italian sub.

I've got the following ingredients:
Ham off the bone
Hot capicola
Genoa salami
Provolone cheese
Lettuce
Tomato
Onion
Oil/Vinegar

Any tips? Mayo? Toasted?

No mayo, and make sure you sprinkle it with some oregano after you dress it with the vinegar and oil. I like mine toasted, and I also like to add hot peppers.

You need dry salami, preferably made with wine, instead of Genoa. BUT, you gotta work with what you have, I understand.
Otherwise, do you have any pickled peppers or roasted sweet peppers? Those are pretty essential for a great Italian sub.
Toast your sub with the meats and cheeses on it (and any roasted or grilled peppers and onions) then add your cold vegetables, plus oil and vinegar, and a shake of italian seasonings and red pepper flakes.

it needs mayo. if you don't have mayo, the only way to make it wet enough to be edible is with watery stuff - the sandwich will fall apart.
