Usually I just have cheddar though because it's cheaper. Worst cheese I ever used was harvarti, it just becomes a liquid mess. Had never cooked with it before, didn't expect things to go so wrong.

Read a suggestion to use Gruyère somewhere, tried it and it is quite nice. Half Gruyère / half sharp cheddar is my current go-to for grilled cheese.

Pan-fried in vegetable oil is the way to go. I just use all the old cheese I have before it goes to shit, make some Cambell's tomato rice soup, and ejaculate several times and pass out for a few days.

There's a key difference when discussing the type of cheese though.
If you're putting different shit in there you'll want to pair it with different cheese.

I prefer toasting or grilling rather than frying:
cheddar + red chili peppers (thinly sliced) or
muenster + avocado (thinly sliced) + black pepper

Call me a pleb, but I prefer American cheese. Pan seared slightly in butter. Then I dip it in Habenero hot sauce. That's the way my wife makes it, that's the way I eat it.
