Protein is easy. Just eat a bunch of beans or nuts. Hell, 2000 calories of potato has 40-50 grams of protein.

these are tasty, but also super expensive and pretty low tier protein for how much fat you get with them.

Vegetarians just don't eat meat (some eat fish). Vegans don't eat any animal products at all.

My point is that if you're eating enough calories, it's pretty hard to get too little protein, unless you're trying to build muscle or something that requires more protein than normal. I average 80-100g/day on a vegan diet, mostly because I eat a lot of beans and cook lots of seitan/roasted tofu.

If you look at the chart I posted, potato is one of the worst things on there. But, for comparison, some types of bread are higher in protein by weight/calorie than oscar mayer wieners, green peas are similar to 2% milk, lentils are similar to poached eggs, tempeh is comparable to 80% lean ground beef, tofu (especially pressed) is between that and steak, seitan can have more protein by calorie and weight than tenderloin, etc.

Quinoa is also. If you're combining foods then it's trivial to get complete proteins: rice and beans, seitan made with soy sauce, hummus and pita, ezekiel bread, peanut butter sandwich, etc.

In reality, if you eat a varied diet, you will get enough of all essential amino acids over the course of a day that you're not going to have any problems.

Potato is about 9% protein by calorie, so if you ate 2000 calories of potato then you would end up with about 45 grams of protein, not 20.

If, on the other hand, you eat a balanced diet that averages 15-20% protein, that is 75-100g protein.

For reference:
* sweet corn and quinoa are both about 15% protein by calorie
* in the 15-20% range are most nuts/seeds (many of which are more protein dense per gram than eggs).
* Chickpeas are 20%; kidney, black, and lima beans 25%
* green peas ~27%
* tempeh is on average around 35%
* tofu about 43%
* seitan and TVP are 60%+

Who says you need to eat nothing but potatoes? I'm just saying that as long as your food on average has more protein than potato, you're golden. Even if your food on average had the protein content of potato, you wouldn't become sick from it.

Yeah, I do. It's not *that* messy, but I make everything from scratch anyway (including nondairy butter), so my threshold for messy might be different.

Basically, my method is:

1. Make a slurry (pressed tofu, mashed potato, pureed beans, etc, + water + soy sauce + olive oil)
2. Mix gluten flour, seasonings, etc, separately
3. Pour slurry into flour mixture, mix until it comes together, then knead on a surface floured with gluten (I'm careful kneading so the flour doesn't get off the cutting board) for however long it takes, let it rest midway so it hydrates completely
4. Cook* and then let it chill overnight in marinade (chilling in marinade is extremely important to texture)

* For cooking, usually I either wrap in cheesecloth and steam, or wrap in foil like a tootsie pop, bake, and then simmer in stock). You can get fancy and try frying the outside to get a better skin, pic related

This one is fried chicken-style seitan out of Seitan and Beyond. It is actually fibrous when you break it, but I can't be bothered to convert to webm of the correct size.

Most meat replacement products have proven to have higher amounts of said crucial sources. As a vegetarian there isn't much to worry about, but you could always buy multivitamins if you're starting to worry.
