In many countries the use of blood in cuisine is regulated and a license may be required. Here in Australia I'd need to lodge a request for a waiver to HACCP laws to allow the use of blood in food.
Traditionally it was used as a thickening agent in some stews. Particularly a stew the French call Civet where furred game is stewed for a period of time and the stew is thickened with that animals blood.
It's pretty damn tasty when cooked properly.

In Chinese areas, there's a common thing added to soups which is basically a block of rice in either pig's blood or duck's blood. They also use just plain old blocks of coagulated pig's blood in soups.

Correct. The mohel typically spits it into a special metzitzah cup, or in some traditions into dirt, though they do swallow a bit.
