There's a school of thought that beef shouldn't be seasoned at all because apparently the taste should speak for itself (an actual quote from a dumbass family member of mine), and if you use salt and pepper it should be minimal to the point where you can barely taste it.

Well there's some truth to that on prime cuts like ribeye. But salt and pepper properly used enhance not obscure. They sound like hick desu and probably talk about shit cuts like choice sirloin which need a good marinade first.

I grew up poor and my mom, I love her, but she was a terrible cook.

Cheap cuts of meat, poorly seasoned, and poorly cooked turned me off eating just about every cut of red meat.

I remember hating steak as a kid until I discovered medium rare steak and now I just tolerate it.
Frankly since I don't enjoy it it's just not worth eating since it's expensive and has way too many calories which I'd rather invest in something that actually tastes good.

you can't jiust call something 'ass' and wilfully intend every connotation thereof. it is not exposed to the outside world, it is muscle tissue. you don't need to season meat for it to have an appealing flavour.
