New Orleans Cuisine

Happy Mardi Gras Veeky Forums! Final batch of king cakes of the season are rolling in. It's a party down here! What's your favorite New Orleans food?

I'm from New Orleans, I live here, my favorite food is a shrimp poboy w: mayo, lettuce, pickle, ketchup, and crystal hot sauce. Side of zapp chips.

New Orleans probably has one of the more legitimate culinary cultures in the US.

hello neighbor, happy Mardi Gras. I'm getting a poboy today from Domilese's Uptown. My favorite. I'm partial to fried oyster myself. Crystal is better than Tabasco, especially on a po boy. You know what's up.

Good call. I'd venture down, but I live by Tulane and prefer not to drive much. Enjoy your poboy. I got one from Brisbi's yesterday and it was pretty decent.

Cat po'boy from Hank's (with 2pc fried chicken appetizer)
Muffuletta from Frady's One Stop (COLD, heating the up is bullshit)
Homemade red beans and rice with pickle tips and D and D sausage

Its not far from Tulane at all. 5 min drive from where I live, and I stay on Magazine right by the park.

HANK'S is so awesome, its cheap as fuck and 10/10. Gotta disagree with ya about the heated muffaletta tho. I insist on it being toasty, hot, and melty.

>I insist on it being toasty, hot, and melty.
Fair enough. You are not alone in that preference. More and more people are leaning that way it seems. (I blame Couchon Butcher). I'm a little more of a traditionalist. If I wanted a hot sandwich I'd get a po'boy.

Stopping by New Orleans soon. What are some must have meals there?

I feel like a lot of the food culture will be lost on me though since I'm not crazy about seafood.

Go to Muriel's, Brigsten's, Commander's Palace, and any other places you feel the need to attend.

Looks delicious

I like etouffee
pic related was the only good kind you could get around here
but Walmart stopped selling it

You must go to Mandina's. Get some turtle soup. Then try the veal Parmesan, seafood platter, any of the specials.

That other guy gave you some good places.

Go to Miss Mae's and get some drinks.

Get some Vietnamese.

La Boca does a phenomenal steak and sweetbreads.

I live in Michigan and I went to get a box of paczkis the other day and they only had king cakes, what the fuck is up with that, nobody celebrates mardi gras up here and I barely understand what it even is

Grrr..

That's really odd. King cakes are good though. You see where they came from?

>I barely understand what it even is
Lenten fasting was a thing back in the day for Catholics. (Still is for Greek Orthodox). Today observant Catholics can just eat a fillet-o-fish on Friday and feel like they've done their bit. Back in the day people fasted and abstained from doing pretty much anything fun for Lent, which begins on Ash Wednesday. So in Catholic cultures the Tuesday before that was traditionally a blow out party. In NOLA the French Mardi Gras traditions got interwoven with Latin Caribbean Carnival traditions and the pretty uniquely African American Mardi Gras Indian thing. The result is not just a crazy party, but a deep cultural mash up that only exists in New Orleans.

I love you NOLA

Alright guys, Northerner of Acadian descent here here. Rate my King Cake.

Another shot

Looks decent!

What say you /ck?

Slice shot

Give us a crumb shot!

This was before icing.

Will do in a bit! Waiting for my family to come home!

Holy shit, that's beautiful

Ahh! Yeah dont you dare cut into that without the family present!

I baked that one on Sunday, sent family home with some. Ate the last slice for breakfast this morning. Feels sad... I live in Georgia, baking my own is the only way to get a good king cake over here.

I'm good though. I made a huge batch of red beans and they'll keep me company through the week.

The aforementioned red beans, topped with boudin.

I've never heard of anyone baking their own. Looks like they came out great, that's awesome.

That looks like sex, well done!

Prep shot.

tfw calorie ranges for these things range anywhere from 1.5-3.5 per gram
How the fuck am I supposed to tell what the fuck my local bakery's is?

>tfw live in Iowa
>tfw only had one shrimp po'boy in my life during a trip to Texas
>tfw it was so good

Alright guys, here is some delicious crumb porn!

It was delicious, will go phenomenally well with coffee tomorrow morning!

Turned out well

Nice! Crumb looks pretty good. Did you use bread flour or AP?

The best part of having king cake, is being able to eat it for breakfast the next day.

>tfw only been to New Orleans once 3 or 4 years ago
>it was some of the best food I've had in my life

About to dig in. This one looks delicious. Really creamy icing.

This one is cream cheese and strawberry filling. Popped it into the microwave. So sinful.

Used to live in Biloxi before Katrina, Mardi Gras was my favorite holiday

>tfw can't find king cake or moon pies in this godforsaken state

I love Cochon and Butcher. Their duck pastrami is delicious, and I love Cochon's chicken fried rabbit.

It's beautiful
gorgeousness. I can't believe that you had boudin with your red beans, it's like double rice, but still, can't fault you for deliciousness!
>>tfw can't find king cake or moon pies
The king cake is easy to get minus the tooth-breaker plastic baby in there. It's simply a danish ring. And, I think I always see moon pies at Wal-mart. Have you looked good?

Oh gosh, I see I need to get some cajun food going this weekend. I was particularly inspired by the soaking beans.

AP

>strawberry and cream cheese filling
I just creamed my panties.

>. I can't believe that you had boudin with your red beans, it's like double rice

Do0d. Double RICE. LIVE THE LIFE. It's out there, don't hold yourself back.

>It's simply a danish ring.

A proper king cake is so much more than a danish. The reason I have to bake my own is because all the ones around me are just fucking cheese danishes with purple, green, and gold icing.

The one i make is filled with cinamon, lemon and orange zest and topped with a vanilla/lemon icing. it is the most honest reproduction to the classic/traditional gambino's, mckenzie's, and randazzo's king cakes of my child hood.

Closer to a cinamon roll than a danish. Somewhere in the late 80s eveyrone started making cheese cake filling and strawberry filling and apple cinamon and lemon and chocolate... and thats ALL BULLSHIT.

The other thing that happened was that everyone started making non-braided cheaper cakes and most poor people started purchasing those. Very few bakeries still make the fully braided ones and they cost about 80 bucks but are totally worth it. Sad to see the king cake of my childhood fading..

For instance, knows where it's fucking at. That is PROPER KING CAKE - minus the braid. But the filling looks fucking spot on. I would suggest the use of bread flour next time for a more proper proof/rise/oven spring. But thats a damn good looking cake.

Microwaving for 8 to 10 seconds.... yes. thumbs up sir. Acquiring a king cake with strawberry cream cheese filling.. you might as well have gone to winn dixie and gotten a fucking cheese danish you filthy fucking casual piece of shit. i award you no points for braid and no points for filling. I hope you lose a foot to the diabeetus.

Hey, I know all the places you mentioned. RIP McKenzies. Someone gave me the king cake. I know the filling ain't traditional but it's still tasty. Since you've left, there's been some awesome non-traditional types of king cakes from respected bakeries around here. Bananas foster and nectar soda were two of the flavors that come to mind.

I'll keep those in mind for sure, thanks.
Turtle soup sounds unique.
Vietnamese is an interesting pick.

Looking forward to it more now

Basically, Louisiana is like spot on to vietnam's climate. The Vietnamese made their home here, subsequently we have probably one of the most authentic Vietnamese food cultures here. They are quite revered.

Turtle soup is great, get it with sherry and enjoy.

I need pho. I'm so hungover from yesterday.

They're a little highbrow for me, but no doubt their stuff is great. I feel the same way about Bacchanal. Great places to drop some dough. I just find it hard to feel like dropping some dough when two pieces of fried chicken at Hank's is a dollar and a decent meal at Melba's is so cheap.

Do you live in St Roch?

I don't live there, but I'm there often. Got family in the 7th and friends in the Upper 9th.

New Orleans fags get out.

Original Mardi Gras niggers coming through.

Mobile boys WW@?!?

>buy a King Cake because someone said there's baby in it
>nearly choke on plastic toy
>baby flesh isn't even listed in the ingredients

When I make them I put a jelly bean in it instead. A purple one, because fuck the guy that finds it right? That shit is worse than fucking choking to death.

>no babies were harmed in the making of this cake

Do the chinese version

baby mice :3
