I really like fried zucchini, even though at that point there's no reason in it being a vegetable.

I use to make a mean vegetable bake consisting of zucchini, onion, mushrooms, Kalimata olives, and cherry tomatoes. With crushed garlic, rosemary, evoo, salt and pepper over the top.
