or you can look at it like $27 inlcudes the $2 dollars given to the bellhop as the room cost $25. The problem suggests the bellhop gets paid twice

This is not a math problem. The "riddle" is worded in a way that makes it confusing. They gave the bell boy 30$, and (after tip) he gave them back 3$, so that their total cost was 27$ (9$ each). There should be no confusion.

The misdirect is thinking it should all add up to 30. The number we should be looking for is 27 because we know they got 3 back.
30 paid - 3 returned = 27

Laughed, then stopped to think about theory saving, and why it is a bad idea.

They pay $25 for the room. For each person that's $8,333... or $8 + 1/3rd of a dollar.
They tip the bell boy $2. For each person that's 2/3rds of a dollar. 8 and 1/3 + 2/3 = $9.
They keep $3 of the money the bell boy gives them. For each person that's $1. 9 + 1 = 10, which is what every person started with.

There is no missing dollar.

because you subtract from the wrong sum using numbers that makes the error not immediately obvious. Change out the numbers and you will see how.

money gained and now in the hands of the bell boy and hotel manager = 25 +2 = 27.
