As someone who doesn't know shit about bread, what exactly is meant by a good crumb and how is that achieved when baking? I can't tell what's wrong with the OP pic.

It's really quite subjective. Some people like a smaller bubble, more even crumb, other people like huge bubbles with an uneveness to it.

The bread in the op is a very fine crumb, almost cake like, though it doesn't look overly dense to me. It just looks like the results of having an ever so slightly under-hydrated dough while using commercial yeast - which created that dense / fine bubble crumb. Now the large chambers that you see are from fucked up folding technique, or fuck ups in the final shaping. Those should not be there. But OP is right, if it still tastes good then crumb fags can "eat shit" because in the end its all about how the bread tastes and if its edible.

I am sure OP will get his folding and shaping technique together on the next go round and he will have an even better loaf.

It does not matter what he fucked up is leaving his dough to rise long enough. If you don't let is rise for around 12 hours then it is stiff and does not have any bubbles however if you do the dough because very light and soft with a lot of bubble.

As for his crumb I'll bet you he didn't cook it long or at a high enough temperature.
