It's a conscious act of abstinence from something that is important to you. Historically meat was considered a luxury while fish was poor people food so having to eat fish was an act of humbleness.
Or course it makes little sense in modern times, but you can just as well abstain from something else like smoking, drinking watching waifu animes or whatever. (Or don't; it's not as if I'm super catholic myself)
