Blanch them. About 3 to 4 minutes depending on the density of the potato. To serve, re drop them for an additional 4-5 minutes.

So if you start with russet potatoes, cut those into French fry shape, you rinse them, dry them and fry them twice? Is that the idea?

You don't fry them twice at the same temp.

Blanching them in water "roughs up" the surface of the potato. You just have to be careful not to over-cook them.

leave them in fridge to dry out
lightly fry them in low heat
hard fry them afterwards

Its a bit too labour intensive for me ,so i skip a few steps.i did however put the chips in the fridge for an hr after blanching but before frying and they came out awesome. only problem is when i feel like homemade chips, i dont want to wait 3 hours to make the forkers
