Most of our cheese is downright awful compared to the rest of the world. We do have some pretty good ones, but the constant pressure to pasteurize everything has fucked over our cheese industry.

I was in Belgium recently and went to Chimay to get some beers fr the source. I also picked up some Chimay cheeses.

The Chimay grand cru is shit, don't waste your time finding it or your money buying it. Haven't tried the blue or the semihard one I got yet.

I live in NYC. I can walk over to Murray's and get a nice slection of cheese compared to most Americans. But let's not kid ourselves here--we can buy plenty of "imports" but they're all made-for-export versions. The good unpasteurized stuff is banned due to Federal law. We can indeed buy "Brie imported from France" (and other types of cheese too). But those are pasteurized export versions, not the real deal.

I must admit I am rather partial to Humbolt Fog though.

The problem is that's very hard to do in the US. If you have access to a specialty shop like the aforementioned Murray's then you can get a good selection of cheeses. But for most of America that stuff isn't available. You walk up to the deli counter and all they have is Boar's Head, Tillamook, and Cabot. Those are not good cheeses.

I'm well aware that cheap processed cheese exists everywhere in the world.

But in general, the day-to-day standard is much higher. At least it has been in my experience (I have family in Denmark and in England, and I have traveled to Netherlands, Germany, France, and Spain on business) I didn't try much cheese when I was in Spain, but in any of the other countries the normal stuff you'd get from a market or a restaurant would stomp the crap out of the equivalent American cheese.

You live in a lucky location then. In most areas that would be highly illegal.

The whole raw-milk thing is rather strange. In most areas it's banned. In others it's available, but legally restricted (In my state it's legal, but only if you buy it directly from the dairy--it is illegal to sell it in a supermarket). And in others it's actually *encouraged* as a means of boosting the local economy.

There's a lot of good cheese made in Europe that is made with pasteurized milk. You can buy those in American import specialty stores but the prices are insane compared to what they cost in Europe.

The stuff you can get in European supermarkets is only marginally better than the American stuff. You have to go to an actual cheese only shop to get good stuff. Those are found in every mid sized town though.

Do you even mountain cheese? Try some cheeses from the alpine region and never talk about plastic German cheese. That's a north, middle and eastern Germany thing. The south of Germany and Switzerland, Austria have all great cheese. Lots of it made with raw milk from grassfed, pasture raised cows and aged to perfection.

Yeah, that's what surprises me. It's very hard to find a specialist cheese shop in the US. But when my family went to visit relatives in the tiny little town of Vejle, Denmark (which is not famous for cheese) there were no less than three.
