Isn't there always that slight possibility that it's not gravity keeping us on the ground, but some other unknown force we don't understand. It's impossible to prove or deny the unknown because it's unknown.

The entire point is that axioms are things which cannot independently be verified. Thus a logical construction such as mathematics must be predicated on things which by definition cannot be verified. Math then becomes a system of arguments based on an abstract set of rules. There is nothing wrong or philosophically unsettling with this. You are probably concerned because you have associated mathematical truths with reality. The axioms of modern mathematics seem to be connected to the rules of our own universe, and this is unsettling, since it seems to imply that there are some things which cannot be understood through the scientific method. But this is not an issue of mathematics, rather physics.
