Hey guys, 10 years of cooking experience here, and I just started in a new kitchen. The Chef seems to respect my opinions and is looking for dinner specials to make. I've already suggested Chicken Parm served with Caesar Salad, and he liked it. However, I'm still looking for ideas from anyone and everyone. Help a fellow Veeky Forums out?

Didn't say it was ten years of fine dining user. I started as a dishwasher and worked my way up. 5 years or so actually cooking. And I've never been in a position where the chef would actually listen to me.

Dude, if you were working as a dishwasher for five fucking years beforehand then no, that does not add to your cooking career. The only relevant portion of that time would be learning where stuff in the kitchen goes, but that says nothing of your actual ability to cook food.

Why not try a European delicacy?

What sort of restaurant is it? Are your clientele more for laid back dinner or is it closer to 'fine dining'?
Any sort of local meat or produce that you could feature? That typically goes over well.

Additionally, is your menu more traditional or does the chef go for something more out of the box?

I work at a Casino/Restaurant, new lunch and dinner specials every week. on top of that we have your typical b-fast menu , build your own burger, sirloin, prime rib, pulled pork carnitas, Ck/beef skewers, fried rice. the list goes on. Made this Spaghetti Bolognese yesterday.

So its kind of a mix of everything more or less?
I dunno, maybe some kind of meme burger then? Some sort of more 'exotic' meat (elk, buffalo, bison, ect.) to tantalize foodie normies, with appropriately picked memey toppings?
Or if you wanna do something more basic risotto is usually pretty well recieved.

I would suggest getting out of where you are now if you want to improve your game and get out of hotel pan hell. The plates you showed were typical of that type of kitchen, and it sounds like you want more.
