Many different regions and cultures interacting with each other, plus largely agrarian culture and general obsession with food (particularly in cities). Good combination. Also poverty for a long time. I have a friend who grew up in Western China and remembers going over a year without meat when she was a kid because her family couldn't afford it, like many of the families around her. When you're that kind of poor you get really good at making whatever you can get into something delicious. The Chinese (particularly the Cantonese) are masters of this.

The US has shit infrastructure and the guns everywhere makes for a shitty country. Literally the only thing the country has going for it over real countries is the entrepreneurship is valued which also increases salary for certain careers.
