Gyros are not some kind of hip city food. They have them all over the country since like 1920, back when your great grandma was sucking dicks for free on the boat over. Anyway I live in Michigan so literally every Coney island restaurant has them for probably 6-8 dollars. Coney islands have nothing to do with the place in nyc. They're Greek immigrant started restaurants but these days a lot of them are run by arabs. You can get a normal gyro or any of the other varieties.

Cheapest I've seen is a shitty one for $5, but you wouldn't wanna touch it since it's on shitty pita bread and is from the chinese truck, typically, for a decent one, it's about $9~10 bucks with a drink, for an awesome gyro the size of your head, with fries, with meat fresh off the spit.

I do it regularly for salads and other things. It's rather akin to an american meatloaf in preparation but it requires a much different cooking technique to get right. Plus fuck the lamb from New Zealand and Australia. No offense to them but it isn't even worthy of dog food once it reaches the US. It basically has to be fresh. Lamb turns like a fucking zombie in far less time than it takes for AUS/NZ lamb to get here.

You understand that flash frozen tuna is the best tuna on the planet? Flash frozen lamb is the same way. I use 2/3rds beef to 1/3rd lamb for my recipe, but you really can't bitch about meat that comes from the other side of the world.

Once lamb gets over a certain threshold (at least for me) it's gone to all shit and back unless you basically salt it and turn it into something else. Lamb and mutton, to me are very hard to deal with because their gaminess gets out of control VERY quickly.

The gaminess is why you freeze it in place. Fresh game meat rots. Fatty foods freeze the best. I have literally no idea what you're talking about. Fatty tuna, 80/20 chuck, dark chicken and turkey all freeze really well. I honestly have no idea what you're talking about unless you have a shitty freezer.
