I like the flavor of hot sauce but the actual heat is usually too much for my beta taste buds, so I do this intentionally.

My fried chicken egg is always over hard, make sure to break the yolk, pepper both sides, and add the hot sauce as quickly as you can AFTER the egg is done cooking. I also like adding a little oregano to it.
