Basically yeah, it's liquid sodium but as said it also adds flavor that you couldn't get from just a table salt or really any straight-up sodium chloride.

Which means it degrades rather fast once opened(taste), but because its a restaurant, they can spend enough to get to a new container in reasonable time
Or they can import higher quality cheap soy sauce, in larger containers, which taste different due container size(and bacteria culture)

Restaurant also by using better stock, if they have good taste at the least.
