Evaluations based on available or common ingredients, diversity of preparation methods, culinary history, suitability for high class presentation versus suitability for rustic presentation, healthfulness, variety of dishes, quality of alcoholic accompaniments, ease of home preparation etc.
It's still mostly arbitrary but you can at least attempt to discuss objective characteristics rather than personal preferences.
