Made a very large pot of Sunday gravy (what Italians sometimes call the low and slow simmered tomato sauce flavored with meat) yesterday and will have leftovers for a while. I made meatballs with 1:1:1 ratio of beef, veal, and pork, and some Pecorino and herbs. Fried them alongside some sausages (a few hot, a few sweet) and a few short ribs I had left in the freezer. Crushed up a few #10 cans of San Marzanos. Cooked some garlic in the leftover meat oil along with some tomato paste, then added the tomatoes, brought it to a simmer, then added in the meat. Cooked it down for seven hours and served it with some fusilli I had in the cabinet. Came out great. I've made it a hundred times; the key is to keep changing it up until you find a method you enjoy.

Made Shoyu Chicken, sorry no pic

2 tbsp crushed garlic
2 tbsp crushed ginger
1 cup soysauce
1 cup brown sugar
4lb of your favorite kinda chicken

throw it all in a pot, stir when you get bored waiting, careful not to have it boil over and enjoy in 40 minutes

Pistachio Risotto.
My best work so far. It was also my most complex risotto

>I used homemade pistachio paste, made by hand with a mortar and pestle
>I used Carnaroli Rice
>Etna Bianco instead of Sauvignon Blanc
>and I toasted pistachios and used that as garnish.

Flavor wise it was an honest 9.5/10

first time trying polenta, mixed it with provalone and adjusted the salt. Cooked some sirloin tip with onion and button mushrooms, deglazed with beer, added a few shakes of soy, and thickened the sauce with butter. Pretty good but the polenta could have gone without cheese, the sauce was super rich on it's own
