Anyone here ever put rice in a meat pie?
Tried it today, was pretty nice.
>3-4 onions, 10 cloves of garlic, diced celery, diced ginger sauteed in pot with parsley
>add pork, simmer
>wine, touch of brandy go in
>let reduce a little
>water, potato, tomato, carrot, vegetable stock all added
>any spices desired added, cayenne + chilli powder, cumin
>let to simmer for an hour, to reduce
>bottom of pie filled with rice
>sauce and filling layered ontop
>rice mixed into to filling
>baked into pie
Was pretty nice. It's pretty much my food for the next four days. Would definitely make again.
My absolute favorite meat pie is from Paul Prodhomme's Louisiana Cooking, the recipe is Paulette's Wonderful Meat Pie. The crust is a savory dough. The filling is a mixture of ground meats, browned onions and celery, tomatoes and a ton of spice (red & black pepper, oregano? Forgetting), and shredded potatoes. Then the topping is cream cheese plus cream plus spice (oregano?)
