Any tips for actually frying chicken?

I tried for the first time last weekend and while it turned out good for th most part( some was a little burnt), but my coating wasn't really crunchy.
Its hard to explain, it was hard but didn't have the nice crunch you would want from the coating.

Smoked honey + some type of hot sauce or pureed fresh chilies + malt vinegar.

some boringass hot sauce such as krystal or texas pete or frank's is solid desu -- the acidity and heat is a nice counterpoint to the greasy chicken

80/20 Maple and siracha
Add dried oregano to taste.

Heat till just boiling, add potatoe starch for that nice smoothness (not too much, as it cools it will thicken more, dont overdo it)

I'm not the guy who posted that, but in my opinion it's hotter than a jalapeno but not as hot as a habanero. It's "lowest common denominator" hot.

I have actually never tried making gravy so I really don't know how to make it.

2oz butter 2oz flour make a roux, add cold milk whisk like a motherfucker, thin with chicken stock or water to the consistency you want, season liberally with salt and pepper to taste, throw some chopped sage in there cause you have a pair.

Scrape all the good fried chicken parts from the bottom of the pan after draining the oil. Add flour to thicken. Add milk and lots of pepper and some salt. Maybe some broth if you want.
