Here's my quinoa salad recipe, OP. It is literally almost all chopped vegetables.

Ingredients:
1/2 cucumber
1-2 red or orange bell peppers
1 dry pint cherry tomatoes, halved
At least half a cup of finely chopped italian flat parsley or cilantro, leaves only
Half to 3/4 cup dry quinoa, cooked.
A dressing of oil, fresh squeezed lemon, and 3-4 cloves crushed garlic
Salt

Optional (recommend you add at least one protein):
1 package smoked or marinated dried tofu (1/2 lb)
A handful of mini bocconcinis
A bunch of mint, basil or oregano, finely chopped
Avocado, diced
Mango, diced
Strawberries, diced
Red onion or shallot, sliced fine
A literal plethora of other possibilities

Ffs this. Sliced the fuck out of my thumb 3 weeks ago slicing cucumbers. Thumb hurt like hell, but made a great cucumber salad.

Large vegetable based dishes generally.

Chop couple sticks of celery, large onion, 2 carrots.
Fry all down in bit of olive oil.
Add garlic when soft.
Season.
Add can of tomatoes or your own chopped tomatoes and maybe 2 cups of water depending on consistency you like.
Couple dashes of Worcestershire Sauce.
Season.
Bay leaf and fave herbs - I just use thyme, parsley and 2 bay leaves.
Simmer for like 40 mins I don't care.
Add 2 cans of drained tuna and a can of sweetcorn and lots of spinach.
Optional, add your favourite type of chilli.

I like it, it's cheap and you can just use your leftover veg and put over pasta with parm grated ontop and extra chilli flakes.
