reducing soups with large meat chunks in them is iffy. if you don't give it enough time to break down the connective tissues (pulled pork / slow cooker style), you'll just get overcooked/dried out chicken
this would be better with chicken thighs, or if you pulled the chicken breasts out while you cooked the potatoes and added them back in for a couple minutes at the end
