im a big fan of slicing and flash frying pork liver and stir frying it with garlic chives and oyster sauce, or cooking pork stomach and then stir frying it in a ginger a rice wine sauce

Crunchy fried tripe is amazing in a taco. I also love dirty rice with chicken liver.

I've only ever ate liver and tripe.
Tripe is fairly common in soups in Southeast Asian food.

Ive read several studies of organ meats replenishing and healing your own body in ways that other things simply cannot. This has made me want to eat them but Im a pescitarian as is and dont know if I could do it. I really want to but its so gross, especially if you dont know where the meat is from.

The term is "offal".

Liver is the only thing I eat that wasn't one-off like turkey heart on Thanksgiving. Fried onions and mushrooms with potatoes and brown gravy over everything.

I eat squirrel tongue when we saute the full squirrel down, it's actually pretty good, my grandpa eats the brains, but I don't really like the taste

I'm against eating liver and kidney purely on principle. Eating the fucking waste disposal and toxin processing centers of the body sounds terrible, prove me wrong.

pigs heart is really damn good. Beef heart is good too but its tougher and has a stronger taste.

I bought a shit ton of livers and kidneys recently, absolutely love them with sauteed onions, cabbage, and a slice if french toast. Thymus gland also kicks ass if you fry it up right.

I like actualy like only heart, maybe you could count intestine and bladders since it's "shell" for sausages
I like liver only in pâté, no way I'm eating it roasted or in soup.
Sometimes, I get this strange slavic craving for tripe soup - Dršťková polévka - but not too often.
Hate everything else, especialy kidneys and lungs.

here in jordan we bbq almost all organs on something called mangal

>Remove fat from veal kidney and cut in smaller chunks
>sear them in a pan with butter, don't forget to season
>drain out excess grease from the pan (or don't but the next step might set your kitchen ablaze)
>crank up the heat and flambee the kidneys in cognac
>add double cream
>simmer for 5 minutes
>adjust seasoning
>???

Moroccan liver, part 1
>marinate veal liver slices in olive oil, white vinegar, cumin powder, paprika powder, salt and coriander for a few hours
>make sure you have a lot of liver and plenty of excess marinade
>pat liver dry and dip in flour
>pan fry it, you wand a healthy layer of oil in there
>don't throw out the oil, it will be used in part 2
>enjoy

Moroccan liver part 2, Electric Bogaloo
>chop leftover fried liver from part 1 in cubes cause you're Moroccan and don't know how to cook small portions
>put it in a cooking pot with leftover marinade and a healthy amount of the frying oil WITH the little flour bits that fell off
>watch that baby thicken while it simmers for 10 minutes
>add kalamata olives and simmer for a couple more minutes
>take it off the fire and add some preserved lemon (rind only) cut in thin strips
>enjoy the best "salad" you've ever had

One of the best offal dishes I've had was a soup of liver and lights. Lights are apparently lungs. Usually only get it when there's a whole hog cooking.

pork brain is good with scrambled eggs. fry the brain in bacon fat before adding eggs.ill have to try it with macaroni that sounds good.

try liver, like monkfish liver you can often find at asian restaurants. It's a delicacy in Japan. Alternatively become a fisherman and enjoy the heart, collar, roe, cheecks, etc.

Back in H.S. my crazy ass biology/science teacher was teaching us shit about animals and brought in a bunch of shit and cooked for us, he had a pan full of shit like heart, tripe and a bunch of other stuff and made tacos and out of the whole class, I was the only one that tried it, and it was fucking delicious. I cant remember the other stuff but i remember heart and tripe. LOL seemed like every time we learned something about some animal, he would cook it and I was the only one to grub down. Couple other times he cooked some snake, boa constrictor iirc and some shark and both times they both tasted like the best chicken noodle soup ever created. He used to do other crazy shit, like blow shit up at our tables and showed us how to build a potato canon

Can confirm its good, havent had it in ages though, we used to raise pigs and my mom would cook that up for breakfast after we slaughtered our pigs. Im not too eager to get it from some unknown source though
