Why the fuck would you get pho when you could get bun thit nuong and actually eat a dish with flavor? Delicious grilled pork, crispy spring roll, fresh veggies, and a wonderful tangy fish sauce vs. boiled chili-lime beef.

Chang who grew up in the communist mainland here. It's a shame that there are a lot of authentic Chinese dishes that go unnoticed in the west.

Food from the north of China is really hearty and sticks to the ribs and really different than the overly sweet and msg-laden Americanized Chinese food that you get here in the west.

Also, food from the northwest Muslim part of China where there is a lot of lamb and cumin and smokey flavours is particularly good imo.

Pic related is one of my favourite noodle dishes (Lanzhou La Mian) from the Northwest part of China. Really delicious and typically also have bits of lamb in it.

I like Pho and eat it every once in a while, but imo a rice noodle just can't compete with a flour based noodle.

Pho is the worst of Asian soups. Any other soup, Vietnamese or other country, is better.
