Sablefish, dover sole, halibut, arctic char. Also daily reminder that fish is better than beef or any other type of hormone pumped, male breast inducing meat. Fish always has been and always will be the most superior and tastiest form of protein.

Any fish fits with fine dining, unless they’re garbage like tilapia or a low quality farmed variety. Turbot and sole are classic fine dining fish
Red Mullet and John Dory
Black Cod, but it's not cheap, and a bitch to get right.
If I were to open a fine dining fish restaurant, I'd focus on fish that aren't regularly available to the home cook.

Pretty much anything. The fish industry just renames garbage fish every once in awhile so that people think they're getting something good and then the price triples. Hake -> Mediterranean Cod, Patagonian Toothfish -> Chilean Sea Bass, Rockfish -> Red Snapper, Slimehead -> Orange Roughy
it's delicious. basically yellowfin but only 5 pounds or so.
