Actually thats not too bad aside from the low fat sour cream(actually healthier to have regular sour cream) and for the grass feed beef, I disagree, I've made grass feed beef tacos before(usually just a dollar or so more than regular stuff in styrofoam packaging, not the ones in tubes) and I prefer the regular stuff as grass feed has a slight sweet taste to it that is not good for tacos

I'd use guac over avocado as a spread layer on bottom. No tomato or salsa, replace with pick de gallo. Instead of shredded lettuce, use whole leaf and pack everything else on top. That will prevent juices from soaking the tortilla. Get a good cheese blend and shred cheese yourself. Maybe some sort of crema instead of sour cream.
