Whisky and milk is actually a pretty decent mix, try it if you have some cheap and difficult to drink whisky some time. You need full milk though, not that skim water.

I figured the citrus zest and vinegar would curdle the milk, and I meant to say salad instead of coleslaw but it still makes sense I thought.

boil your potatoes in milk. then you take them out to mash them. reserve the cooking milk and all the potato starch in it. add the cooking milk back in with butter. the starch in the milk will help emulsify all the dairy fats and liquid.
