I work in a Pho restaurant and the Bun Bo Hue always looks and smells fantastic but I have never been able to try it. Were allowed to eat pretty much anything on our breaks but the Bun Bo Hue is a bitch for the back house to make because it isn't ordered constantly we can't "assembly line" it like the Pho and making it takes up the same kitchen space as the Pho so it can be a hassle. We in the front house won't order it because we don't want to put them through the trouble.

God, I wish the FoH where I work understood basic shit like this. They always order the most tedious/limited shit for themselves.

You mix up the ingredients into the verm, douse in assorted sauces (usually a fish sauce and sambal) and go to town. Possibly my favorite non-soup asian dish

Maybe i have a skewed perspective because i grew up in an area with a lot of viets then. I remember when pho became meme of the month here and was surprised that people thought it was a "cool new thing". Weird how life works out that way

Live in a major metropolitan area near a coast. I love the local asian market. Everything is stupidly cheap. I can't find any of the shit I am looking for. They have questionable food safety. The cashiers scream at me in Cantonese and I yell back in English. We have a good working relationship.
