I have always wanted to try mac anc cheese as it appears to be so quintessentially American, but it seems like a real pain in the ass to make. First making roux, bechamel sauce, boiling the noodles, grating the cheese, and then you have to bake everything in the oven to boot.

It’s funny that you say that, because I live in America, the midwest even, and most people grew up on boxed kraft garbage. The kind of baked shit you’re talking about is the sort of thing that people don’t even eat regularly, it’s the sort of thing you bring to thanksgiving or a house party.

I use a good sharp cheddar, gruyere, and monterey jack.

You don't want to use only cheddar or it will be grainy.

I assume you’re talking about sides to go with your macaroni but toppings are nice too

From what I have read it made with a bechamel sauce with half of the cheese melted into it and the other half of the cheese is layered between the pasta before putting it in the oven.

Make a bechamel then add gruyere, fontina and havarti with some Dijon mustard as well, sautée some cremini mushrooms in some butter and throw that in. Melt butter into some panko breadcrumbs and spread over top and crumble some good blue cheese over the top before baking

Tuna and broccoli. I like that in mac n cheese.
