Blueberry Muffins:
--------------------------------
2 Cups flour
1 Cup Sugar
1 tsp baking powder
2 tsp cinnamon
4 Tbs butter (melted)
1 Cup milk
Mix altogether then fold in
1 Cup blueberries (can substitute for chocolate chips/ or add 2 mashed bananas with 1/2 Cup chopped walnut for banana nut muffins instead)

400F for 20 min
Makes a dozen.

Oven Baked Chicken Thighs:

4 Chicken Thighs with Skin
1/2 tsp Black Pepper
1/2 tsp Salt
1/2 tsp Cayenne/Red Chilli Powder
1/2 tsp Garlic Powder
1 Tbs Butter

1. Mix spices and coat the chicken over and under the skin
2. Split butter into 4 pieces and push under the chicken skin
3. Add to baking dish and bake for 1h at 380F

Add the meat in a sandwich or serve with rice

memeing aside, I just use this seasoning on the chicken only when it's coated in minced/grinded up garlic

The chicken skin and natural fat already give it enough flavour along with the seasoning
there is no reason for you to be stucking butter in it

Butter under the kitchen skin makes it more tasty, spices with butter melt into the meat nicely.
My gf and I roasted chicken in the oven with butter and spices under the skin and on top with lemons and onions inside of the chicken, Literally the greatest chicken I've ever eaten.

Pancakes:
4 eggs
one stick of cream cheese
half cup of oats
(Optional) tsp of cinnamon

1. All ingredients in blender, about a minute
2. Cook in pan with melted butter
Optional: Instead of a pan, cook for 45 minutes in rice cooker to make one big pancake

Chicken for Mexican dishes:

1 1/2 lbs chicken (thighs or thin sliced breasts)
1 tsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp salt
pinch of black pepper
2 tsp brown sugar
juice from 2 limes
1/4 cup vegetable oil

Mix all these ingredients together, then coat the chicken with them. Marinate for at least an hour or up to a day beforehand.
When ready to cook, wipe chicken with paper towels and either grill or cook in a pan on the stove until golden brown.

Slice the chicken into strips. Makes great tacos but you can use it in any kind of Mexican dish, or burritos, quesadillas, whatever. Or just eat the chicken with some rice and beans on the side.

You can also use this for shrimp or steak.

Slow cooker salsa chicken


Chicken, salsa, seasoning
Cook on low for 4-6 hours

Not shilling for the dude or anything. I actually know literally nothing about him other than that he looks like a douchebag, but someone gave me Rocco Dispirito's latest cookbook and it's got some really simple, fairly tasty recipes. He does the gluten-free and dairy-free bullshit so don't feel like you have to follow it to the letter, but what I noticed was that it had some very simple recipes that really are healthy and fairly tasty, with few ingredients. And they're easy. Again, not shilling for the dude, pirate that shit and then spit on his mother if you want, I don't give a fuck. But it's a book I happened to be flipping through recently.
