You'll want to thoroughly check the sides and back of the pack for large amounts of fat. The manufacturers like to hide shitty packages that are majority fat with the labelling. The sides are your biggest indicator, if there is a good amount of meat on each visible side then the pack is probably okay.

Because anything this brand makes is better on any level. Goddamn I love the south since I moved here almost 5 years ago.

Make your own bacon with the belly. Rub with kosher salt, brown sugar, whatever spices (or none) you feel like and sodium nitrite (cure #1). Wrap in plastic wrap, place in a tupperware container and refrigerate for 2 weeks. Take out rinse and cold smoke for 12 hours. Best and cheapest fucking bacon you'll ever eat.

The way bacon is packaged is terrible.

I really wish they sold bacon in half-pounds as the standard. Or at least had each pound separated in to two halves. And don't tell me they would never do that because they do that shit with deli meat.

I always open a pound of bacon but I never need to cook the whole pound. So I end up with a floppy half-pack of bacon in my fridge that half the time I don't use before it goes bad.
