While I love making stews (are they soups??) I most regularly make your basic chicken noodle after I roast a chicken

my favorite thin soup is miso.
Miso is pretty good, but if I’m going for a thicker soup I do like the classic pea soup with bacon and carrots for a nice addition

Pea soup is definitely a savory, but I’ve only ever known pea soup to be made from dried split peas, a lot like lentil soups. You might be able to find a recipe that uses frozen peas but if all else frozen peas go awesome in stew.

How long do you boil your carcass for? I usually do it for an hour or so but I think I might go longer, maybe 2-3 hour region

My minestrone soup that isn't just a bunch of shitty starches:
>2 tbls olive oil
>white onion
>3 cloves garlic
>2 carrots
>vegetable/chicken stock- 2 cartons or so
>kale
>1/4 cup or less of tomato paste
>1 can kidney beans
>zuchini
>yellow squash
>1 tsp Italian seasoning
>cheese tortellini
Chop garlic, onion, and carrots and heat in olive oil to soften. Add stock and Italian seasoning, bring to boil then reduce to low boil/hard simmer until carrots soften a little, then add chopped kale and repeat. Once kale and carrots are mostly cooked, add tomato paste, zucchini, squash, and kidney beans. Add cheese tortellini or boil separately. Once everything is cooked through, salt and peeper to taste; sometimes I add a little bit of cayenne pepper. Zucchini and squash cook pretty fast and will fall apart in the soup so watch it carefully. You can sub kale for spinach

I've been doing one soup dinner per week since winter started, never did the same soup twice.
There are just so many different ones you cant get tired of soup and it warms you up without being overly starchy and full of fat like other typical winter comfort foods.
Still my favorite is squash soup with curry&coconut milk. Might do that one again before winter ends.
