Anything (healthy) like this from other countries, specifically northern/western Europe? I've been eating a lot of rice/veggies/fish lately, trying to eat healthy and I have a hard-on for other cultures, but I live in the rust belt so it's hard to get any Asian ingredients around here. I make smorrebrod once in a while but don't really know what else to make that isn't unhealthy. I'm fairly new to cooking so I never really know what to make.

Flips always use no more than 1tbsp of corn oil in everything fried/sauteed. Also, pork liver is used on Spanish-based dishes.

It depends on what you consider healthy. A lot of the classic dishes in Sweden are made with someone working the fields in mind and are healthy in that regard.

If you consider fat unhealthy I guess you can make meatballs in cream sauce with mashed potatoes a lot healthier by using milk with roux and riced potatoes. Serve with lingonberries (either jam or as they are) and whatever vegetables are in season.
