Because of the shitty snow yesterday, when I got to the supermarket there were only "Turkey Meatballs" left. Thought I'd go American and make a meatball sub. It was better than i expected though.

Stuffed with shit in my fridge i needed to use:
>salt peppered
>thin coat of dijon
>some sliced pancetta (impulse buy on clearance)
>sweeted shallots and a bag of dried apricots from christmas
>some old fresh herbage mostly parsley.
all rolled up and tied.

all cooked. 450F blast for 15 and coast at 350 until internal temp of 140.

I sauteed some cauliflower, red bell pepper, onion, garlic and bacon with some mesquite seasoning. No pics because I was lazy and didn't bother to take any.

I'm going to smoke some ribs and bratwurst tomorrow though, so I'll probably post a pic of that.
